Mojito
 

For those of you with a filthy mind, Mojito literally means 'something wet'. There's a joke in there somewhere, but we'll rise above it for once. 


I favour using sugar over sugar syrup, as the hard crystals help crush the mint and release the flavour into the rum. 


Also, I like to garnish with an almost ridiculous amount of mint brimming the surface, so that you get a full whack the aroma as you bury your nose into the glass.

Ingredients


  1. 1 tsp

  2. 10

  3. 2 msr

  4. 1 msr

  5. Top up with soda water


The Marvellous Method


Rub 1 or 2 mint sprigs around the edge of a Tom Collins glass. Drop the mint into the glass and add the sugar and lime juice.


Muddle, but try not to break the mint up too much. Add ice, then rum. Top up with soda water and stir.


Garnish with a slice of lime and the remaining mint sprigs – the mint should form a bouquet over the surface.
